Ingredients:
- 1kg chicken, cut into serving pieces
- 6 cups water
- 2 tbsp vegetable oil
- 3 medium onions, finely chopped
- 3 cloves garlic, finely chopped
- 1 piece ginger, finely chopped
- 10g tomato paste (or 200g tomato sauce)
- 2 large potatoes, chopped
- 1 large carrot, chopped
- 4 small zucchinis, cut into cubes
- 2 medium eggplants, peeled and diced
- 4 medium tomatoes, diced
- 3 pieces dried lime (optional)
- 1/4 cup olives (optional)
- 2 small green chilies, chopped
- 1 tbsp ground allspice
- 1 tsp ground cinnamon
- 1 tsp turmeric powder
- 1 tsp curry powder
- 1 tsp garlic powder
- 1 tsp coriander powder
- 1 tsp cardamom pods
- 0.25 tsp chili pepper
- 1 medium green bell pepper, chopped
- 1/2 cup coriander leaves, chopped
Cooking Instructions:
- In a large pot, add the chicken pieces and cover with water. Bring to a boil, then reduce the heat and simmer for 20 minutes. Drain the chicken and set aside the stock.
- Heat vegetable oil in a large pot and sauté the onions until golden brown. Add the garlic, ginger, and tomato paste or tomato sauce. Cook for 2-3 minutes.
- Add the chopped potatoes, carrot, zucchinis, eggplants, tomatoes, dried limes, and green chilies. Stir well and cook for an additional 3-4 minutes.
- Now, add the cooked chicken pieces, reserved chicken stock, ground allspice, ground cinnamon, turmeric powder, curry powder, garlic powder, coriander powder, cardamom pods, olives, and chili pepper. Stir to combine all the ingredients.
- Bring the mixture to a boil, then reduce the heat, cover the pot, and let it simmer for 10 minutes to allow the flavors to meld together.
- Finally, add the chopped coriander leaves and simmer for another 5 minutes.
