Ingredients:

  • 1 kg lapu-lapu (grouper) fish, cleaned and sliced
  • 4 medium tomatoes, chopped
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 thumb-sized ginger, julienned
  • 2 tablespoons cooking oil
  • 1 liter water
  • 2 tablespoons fish sauce
  • 1/4 cup Malunngay leaves
  • 4 Long green chili (siling haba)
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish (optional)

Cooking Instructions:

  1. Heat the cooking oil in a pan over medium heat.
  2. Sauté the garlic and ginger until fragrant.
  3. Add the onions and cook until translucent.
  4. Add the tomatoes and cook until they soften and release their juices.
  5. Pour in the water and bring the mixture to a simmer.
  6. Add the fish sauce and season with salt and pepper to taste.
  7. Gently place the lapu-lapu fish slices into the pan.
  8. Cover the pan and simmer for about 10 minutes or until the fish is cooked through.
  9. Adjust the seasoning if needed.
  10. Add the malunggay leaves and long chili and cook for one more minute.
  11. Garnish with fresh cilantro or parsley (optional).
  12. Serve the kinamatisang lapu-lapu hot with steamed rice.
