Ingredients:

  • 1 kg (2.2 lbs) pork shoulder, cubed
  • 1/4 kg (0.55 lbs) pork liver, cubed
  • 2 tablespoons cooking oil
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 2 medium potatoes, peeled and cubed
  • 1 medium carrot, peeled and cubed
  • 1 red bell pepper, seeded and cubed
  • 1 green bell pepper, seeded and cubed
  • 2 to 3 pieces hotdogs, sliced
  • 1 cup tomato sauce
  • 1 cup pork broth (or water)
  • 2 tablespoons soy sauce
  • 1 tablespoon vinegar
  • 1 tablespoon sugar
  • 1 bay leaf
  • Salt and pepper, to taste

Instructions:

  1. In a large pot, heat the cooking oil over medium heat. Add the onions and garlic, and sauté until fragrant and translucent.
  2. Add the pork cubes and liver to the pot, and cook until lightly browned on all sides. This will help seal in the flavors.
  3. Pour in the tomato sauce, pork broth (or water), soy sauce, and vinegar. Stir to combine. Add the bay leaf and season with salt and pepper to taste.
  4. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 30 minutes, or until the pork and liver are tender and the flavors have melded together.
  5. Add the cubed potatoes, carrots, bell peppers, and sliced hotdogs to the pot. Stir to distribute the ingredients evenly. Continue simmering for another 5 minutes, or until the vegetables are cooked through but still slightly firm.
  6. Stir in the sugar and adjust the seasoning if needed. Simmer for an additional 5 minutes to allow the flavors to meld.
  7. Once cooked, remove the bay leaf from the pot. Serve the Menudo hot with steamed rice.
