Ingredients:
- 1kg chicken chopped into serving pieces
- 4 garlic cloves minced
- 1 medium onion chopped
- 2 tablespoons yellow curry powder
- 1 tablespoon coconut oil
- 1 can (14 ounces) of coconut milk
- 1 cup chicken broth
- 1 tablespoon fish sauce
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 2 large potatoes cubed
- 1 medium carrot cubed
- Salt and pepper, to taste
- Fresh cilantro, chopped, for garnish (optional)
Directions:
- Heat the vegetable oil in a large saucepan over medium heat. Add the onion and garlic, and sauté until the onion is soft and translucent.
- Add the chicken to the saucepan, cover and cook for 10 minutes.
- Pour in the coconut milk and chicken broth, and bring to a boil.
- Add the yellow curry powder, stir, reduce heat and simmer for 15 minutes.
- Stir in fish sauce, red and green bell peppers, potato, and carrot. Cook until vegetables are tender, about 5 minutes.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh cilantro.
