Ingredients:

  • 1 kg chicken, cut into serving pieces
  • 250 grams of chicken liver, sliced
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 thumb-sized ginger, sliced
  • 2-3 pieces red chili pepper (or more, depending on the desired spiciness)
  • 1/2 cup moringa leaves or chili leaves
  • 2 cups sliced green papaya
  • 6 cups water
  • 1 tablespoon fish sauce
  • 2 tablespoons cooking oil
  • Salt to taste

Procedures:

  1. In a pot, heat the cooking oil over medium heat. Sauté the onions, garlic, and ginger until fragrant.
  2. Add the chicken pieces and cook until lightly browned.
  3. Pour in the water and fish sauce and bring to a boil. Simmer for 30 minutes or until the chicken is cooked.
  4. Add the chicken liver, chili pepper, sliced green papaya, and moringa leaves or chili leaves. Season with salt and pepper. Simmer for another 10 minutes or until the vegetables are cooked. Add salt or fish sauce to taste.
  5. Serve hot with rice.
