Ingredients:
- 1 whole grouper (or lapu-lapu), about 1.5 lbs, scaled and gutted
- 2 red chilies, sliced
- 4 cloves garlic, sliced
- 1/4 cup soy sauce
- 1/4 cup water
- 1 tablespoon rice vinegar
- 1 tablespoon sugar
- 4 slices of lime
- 2 stalks of scallions, sliced
- Fresh cilantro, chopped
- 1-inch piece of ginger, sliced
Instructions:
- Rinse the fish under cold water and pat dry with paper towels. Score the fish with a few shallow cuts on both sides.
- In a small bowl, mix together the soy sauce, water, rice vinegar, and sugar to make the sauce.
- Place the fish on a heatproof plate that fits inside your steamer basket.
- Scatter the sliced garlic, ginger, and red chilies over the fish.
- Pour the sauce over the fish and top with the lime slices.
- Bring the water in your steamer to a boil over high heat.
- Place the plate with the fish inside the steamer basket and steam for 12-15 minutes, or until the fish is cooked through.
- Once the fish is cooked, remove the plate from the steamer and sprinkle with sliced scallions and chopped cilantro.
- Serve hot with steamed rice.
