Ingredients:

  • 800g Lapu-Lapu fish fillets, scaled and cleaned
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • Vegetable oil for frying
  • 1 red bell pepper, cut into chunks
  • 1 green bell pepper, cut into chunks
  • 1 onion, cut into chunks
  • 1 carrot, sliced
  • 1 cup pineapple chunks (canned or fresh)
  • 1/4 cup vinegar
  • 1/4 cup ketchup
  • 3 tablespoons brown sugar
  • 2 tablespoons soy sauce
  • 1/2 cup water
  • 1 tablespoon cornstarch, dissolved in 2 tablespoons water
  • Green onions, chopped (for garnish)
  • Steamed rice (for serving)

Instructions:

  1. In a shallow dish, combine the all-purpose flour, salt, and black pepper. Mix well.
  2. Dredge the Lapu-Lapu fish fillets in the flour mixture, making sure to coat them evenly on both sides.
  3. Heat vegetable oil in a deep frying pan or wok over medium heat. Fry the fish fillets until golden brown and crispy on both sides. Remove from the pan and set aside on a paper towel-lined plate to drain excess oil.
  4. In the same pan, sauté the bell peppers, onion, and carrot until they are slightly tender.
  5. Add the pineapple chunks to the pan and stir briefly.
  6. In a small bowl, whisk together the vinegar, ketchup, brown sugar, water and soy sauce until well combined.
  7. Pour the sweet and sour sauce mixture over the vegetables in the pan. Stir well to coat the vegetables. Let simmer for 2 minutes.
  8. Gradually pour in the cornstarch mixture, stirring continuously until the sauce thickens to your desired consistency.
  9. Carefully place the fried Lapu-Lapu back into the pan, gently spooning some of the sauce over them.
  10. Simmer the fish in the sauce for a few minutes until heated through and the flavors meld together.
  11. Remove from heat and garnish with chopped green onions.
  12. Serve the Sweet and Sour Lapu-Lapu over steamed rice and enjoy the flavorful delight!
