Ingredients:
- 800g Lapu-Lapu fish fillets, scaled and cleaned
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- Vegetable oil for frying
- 1 red bell pepper, cut into chunks
- 1 green bell pepper, cut into chunks
- 1 onion, cut into chunks
- 1 carrot, sliced
- 1 cup pineapple chunks (canned or fresh)
- 1/4 cup vinegar
- 1/4 cup ketchup
- 3 tablespoons brown sugar
- 2 tablespoons soy sauce
- 1/2 cup water
- 1 tablespoon cornstarch, dissolved in 2 tablespoons water
- Green onions, chopped (for garnish)
- Steamed rice (for serving)
Instructions:
- In a shallow dish, combine the all-purpose flour, salt, and black pepper. Mix well.
- Dredge the Lapu-Lapu fish fillets in the flour mixture, making sure to coat them evenly on both sides.
- Heat vegetable oil in a deep frying pan or wok over medium heat. Fry the fish fillets until golden brown and crispy on both sides. Remove from the pan and set aside on a paper towel-lined plate to drain excess oil.
- In the same pan, sauté the bell peppers, onion, and carrot until they are slightly tender.
- Add the pineapple chunks to the pan and stir briefly.
- In a small bowl, whisk together the vinegar, ketchup, brown sugar, water and soy sauce until well combined.
- Pour the sweet and sour sauce mixture over the vegetables in the pan. Stir well to coat the vegetables. Let simmer for 2 minutes.
- Gradually pour in the cornstarch mixture, stirring continuously until the sauce thickens to your desired consistency.
- Carefully place the fried Lapu-Lapu back into the pan, gently spooning some of the sauce over them.
- Simmer the fish in the sauce for a few minutes until heated through and the flavors meld together.
- Remove from heat and garnish with chopped green onions.
- Serve the Sweet and Sour Lapu-Lapu over steamed rice and enjoy the flavorful delight!
