Ingredients:

  • 1 kg pork belly, sliced into bite-sized pieces
  • 1 liter water
  • 4 cloves garlic, minced
  • 1 onion, chopped
  • 2 medium tomatoes, chopped
  • 2 long green peppers (siling pansigang)
  • 1 radish, peeled and sliced
  • 2 eggplants, sliced
  • 1 bunch kangkong (water spinach), ends trimmed
  • 1 packet sinigang sa sampalok mix (tamarind soup mix)
  • Fish sauce (patis) or salt to taste
  • Cooking oil for sautéing

Instructions:

  1. Heat cooking oil in a large pot over medium heat. Sauté the minced garlic until fragrant.
  2. Add the chopped onions and cook until translucent.
  3. Stir in the chopped tomatoes and cook until softened.
  4. Add the pork belly slices to the pot and stir well to coat them with the aromatics.
  5. Pour water into the pot and bring to a boil. Reduce the heat to low and simmer for about 30 minutes or until the pork is tender.
  6. Add the sinigang sa sampalok mix to the pot. Stir well to dissolve the mix.
  7. Add the radish and eggplant slices. Simmer for about 5 minutes or until the vegetables are tender.
  8. Adjust the taste by adding fish sauce (patis) or salt according to your preference.
  9. Finally, add the kangkong (water spinach) and siling pangsigang and cook for an additional 2 minutes until wilted.
  10. Remove the pot from heat and transfer the Sinigang na Baboy to a serving bowl.
  11. Serve hot with steamed rice and enjoy the comforting flavors!
