Ingredients:

  • 1 kg whole chicken, chopped into serving sizes
  • 2 cups cauliflower florets
  • 1 chayote, sliced
  • 2 cups broccoli florets (optional)
  • 1 red bell pepper, thinly sliced
  • 1 carrot, sliced thin rounds
  • 1 cup snap peas, ends trimmed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 2 tbsp vegetable oil
  • Salt and pepper to taste
  • 2 tbsp cornstarch (to be added at the end to thicken the sauce)

Optional Dipping Sauce:

  • 3 tbsp soy sauce
  • Juice of calamansi (or substitute with lime)
  • 1 small red chili, finely chopped

Instructions:

  1. Mix the sliced chicken with soy sauce and oyster sauce in a bowl and set aside to marinate for 15 minutes.
  2. Heat vegetable oil in a wok or large skillet over medium-high heat. Add minced onion and garlic and stir-fry until fragrant.
  3. Add the marinated chicken and cook for 5 minutes. Then, add 1 cup water, cover, and simmer until the chicken is tender.
  4. Incorporate cauliflower, chayote, broccoli, bell pepper, carrot, and snap peas. Simmer for additional 3-5 minutes until vegetables are tender-crisp.
  5. Season with salt and pepper, Stir well.
  6. In a small bowl, mix cornstarch with a bit of water to create a slurry. Pour it into the wok to thicken the sauce. Stir continuously until the sauce reaches the desired consistency.
  7. Optional Dipping Sauce: Mix soy sauce, calamansi juice, and chopped red chili in a small bowl. Adjust chili quantity according to your spice preference.
  8. Serve the Chicken and Vegetable Chop Suey over cooked rice or noodles, with the optional dipping sauce on the side.
