Ingredients:

  • 1 kg (2.2 lbs) pork belly, sliced into strips
  • 1/2 cup soy sauce
  • 1/4 cup ketchup
  • 1/4 cup brown sugar
  • 3 tablespoons honey
  • 2 tablespoons rice vinegar
  • 4 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • Cooking oil for grilling

Instructions:

  2. Place the pork belly strips in a resealable plastic bag or a shallow dish. Pour the marinade over the pork belly, ensuring each strip is coated. Marinate in the refrigerator for at least 2 hours or overnight for maximum flavor.
  3. Preheat the grill to medium-high heat. Brush the grill grates with cooking oil to prevent sticking.
  4. Remove the pork belly from the marinade and shake off any excess. Reserve the marinade for later use as barbecue sauce.
  5. In a small saucepan, pour the reserved marinade and bring it to a boil over medium heat. Reduce the heat to low and let it simmer for about 5-10 minutes, or until the sauce thickens to your desired consistency. Stir occasionally.
  6. While the sauce is simmering, grill the pork belly strips on the preheated grill for about 10-12 minutes per side, or until nicely charred and cooked through. Baste with the simmered sauce during grilling, turning occasionally.
