Ingredients:

  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, peeled and diced
  • 2 stalks of celery, diced
  • 1 pound boneless, skinless chicken breasts, diced
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 cups shredded cabbage
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 ounces elbow macaroni
  • 12-ounce evaporated milk
  • Fresh parsley, chopped, for garnish

Directions:

  1. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the onion and garlic and sauté for 2-3 minutes, until softened.
  2. Add the carrots and celery and cook for an additional 2-3 minutes, until slightly softened.
  3. Add the diced chicken and cook for 5-7 minutes, until lightly browned.
  4. Pour in the chicken broth and add the thyme, rosemary, salt, and pepper. Bring the mixture to a boil and then reduce the heat to low. Simmer for 15-20 minutes, until the chicken is cooked through and the vegetables are tender.
  5. While the soup is simmering, cook the macaroni in a separate pot according to package instructions. Drain and set aside.
  6. Once the chicken and vegetables are cooked, stir in the cooked macaroni, milk, and cabbage. Cook for an additional 5 minutes, until the soup is heated through and the flavors are well combined.
  7. Serve the soup hot, garnished with fresh parsley.
