This steamed fish dish is a delicious and healthy way to enjoy fresh fish. The red chilies, ginger, and lime slices add a burst of flavor and color to the dish. You can use any firm white fish, such as grouper or Lapu-Lapu (Philippine seabass) for this recipe. It is easy to prepare and perfect for a quick weeknight dinner or a special occasion.

Ingredients:

  • 1 whole grouper (or lapu-lapu), about 1.5 lbs, scaled and gutted
  • 2 red chilies, sliced
  • 4 cloves garlic, sliced
  • 1/4 cup soy sauce
  • 1/4 cup water
  • 1 tablespoon rice vinegar
  • 1 tablespoon sugar
  • 4 slices of lime
  • 2 stalks of scallions, sliced
  • Fresh cilantro, chopped
  • 1-inch piece of ginger, sliced

Instructions:

  1. Rinse the fish under cold water and pat dry with paper towels. Score the fish with a few shallow cuts on both sides.
  2. In a small bowl, mix together the soy sauce, water, rice vinegar, and sugar to make the sauce.
  3. Place the fish on a heatproof plate that fits inside your steamer basket.
  4. Scatter the sliced garlic, ginger, and red chilies over the fish.
  5. Pour the sauce over the fish and top with the lime slices.
  6. Bring the water in your steamer to a boil over high heat.
  7. Place the plate with the fish inside the steamer basket and steam for 12-15 minutes, or until the fish is cooked through.
  8. Once the fish is cooked, remove the plate from the steamer and sprinkle with sliced scallions and chopped cilantro.
  9. Serve hot with steamed rice.
