Ingredients:

  • 1kg  chicken chopped into serving pieces
  • 4 garlic cloves minced
  • 1 medium onion chopped
  • 2 tablespoons yellow curry powder
  • 1 tablespoon coconut oil
  • 1 can (14 ounces) of coconut milk
  • 1 cup chicken broth
  • 1 tablespoon fish sauce
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 large potatoes cubed
  • 1 medium carrot cubed
  • Salt and pepper, to taste
  • Fresh cilantro, chopped, for garnish (optional)

Directions:

  1. Heat the vegetable oil in a large saucepan over medium heat. Add the onion and garlic, and sauté until the onion is soft and translucent.
  2. Add the chicken to the saucepan, cover and cook  for 10 minutes.
  3. Pour in the coconut milk and chicken broth, and bring to a boil.
  4. Add the yellow curry powder, stir, reduce heat and simmer for 15 minutes.
  5. Stir in fish sauce, red and green bell peppers, potato, and carrot. Cook until vegetables are tender, about 5 minutes.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh cilantro.
