Ingredients:

  • 2 kg fresh crabs, cleaned
  • 200g unsalted butter
  • 10 cloves of garlic, minced
  • 1 teaspoon red chili flakes (adjust to taste)
  • 1 tablespoon fresh parsley, chopped
  • 500 ml Sprite or 7 Up or Royal True Orange
  • 2 tablespoons cornstarch
  • Salt and black pepper to taste

Instructions:

  1. Start by cleaning the crabs thoroughly under running water. Brush them gently to remove any dirt or debris. Remove the crab’s poop by squeezing them out.
  2. In a large pan or skillet, melt the butter over medium heat. Add the minced garlic and red chili flakes, and sauté until fragrant and lightly golden.
  3. Stir in the Sprite or 7 Up or Royal True Orange. Let it simmer for a few minutes to allow the flavors to meld together.
  4. Carefully place the cleaned crabs into the pan, ensuring they are evenly coated with the sauce. Season with salt and black pepper to taste.
  5. Cover the pan and cook for approximately 10 minutes, or until the crabs turn a vibrant orange color and the meat becomes tender.
  6. Once cooked, remove the crabs from the pan and arrange them in a glass bowl, leaving the sauce in the pan. You have the option to cut the crabs in halves for easier eating and presentation.
  7. In a small bowl, mix the cornstarch with a little water to create a slurry.
  8. Return the pan with the sauce to the heat and gradually pour the cornstarch slurry into the sauce, stirring continuously.
  9. Cook for an additional 2-3 minutes, or until the sauce has thickened to your desired consistency.
  10. Pour the thickened sauce over the crabs, ensuring they are evenly coated.
  11. Sprinkle the chopped parsley over the crabs for garnish.
