Ingredients:
- 2 lbs. bone-in, skin-on chicken thighs
- Salt and pepper
- 2 tbsp. olive oil
- 1 large onion, diced
- 4 cloves garlic, minced
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 1 can (28 oz.) crushed tomatoes
- 1/2 cup chicken broth
- 1 tbsp. tomato paste
- 1 tbsp. Italian seasoning
- 1/2 tsp. red pepper flakes
- 1 bay leaf
- 1/4 cup chopped fresh parsley
Directions:
- Preheat oven to 350°F.
- Season chicken thighs with salt and pepper.
- Heat olive oil in a large oven-safe Dutch oven or pot over medium-high heat. Add chicken and cook until browned on both sides, about 5-6 minutes per side. Remove chicken and set aside.
- In the same pot, add onion, garlic, green bell pepper, and red bell pepper. Cook until vegetables are soft, about 5 minutes.
- Add crushed tomatoes, chicken broth, tomato paste, Italian seasoning, red pepper flakes, and bay leaf. Bring to a simmer.
- Return chicken to the pot, skin-side up. Spoon some of the sauce over the chicken.
- Cover and bake in the oven for 45-50 minutes, or until chicken is cooked through.
- Sprinkle with chopped parsley before serving.
