Ingredients:

  • 2 lbs. bone-in, skin-on chicken thighs
  •  Salt and pepper
  • 2 tbsp. olive oil
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1 can (28 oz.) crushed tomatoes
  • 1/2 cup chicken broth
  • 1 tbsp. tomato paste
  • 1 tbsp. Italian seasoning
  • 1/2 tsp. red pepper flakes
  • 1 bay leaf
  • 1/4 cup chopped fresh parsley

Directions:

  1. Preheat oven to 350°F.
  2. Season chicken thighs with salt and pepper.
  3. Heat olive oil in a large oven-safe Dutch oven or pot over medium-high heat. Add chicken and cook until browned on both sides, about 5-6 minutes per side. Remove chicken and set aside.
  4. In the same pot, add onion, garlic, green bell pepper, and red bell pepper. Cook until vegetables are soft, about 5 minutes.
  5. Add crushed tomatoes, chicken broth, tomato paste, Italian seasoning, red pepper flakes, and bay leaf. Bring to a simmer.
  6. Return chicken to the pot, skin-side up. Spoon some of the sauce over the chicken.
  7. Cover and bake in the oven for 45-50 minutes, or until chicken is cooked through.
  8. Sprinkle with chopped parsley before serving.
