Sugar Salt Mixture:

  • Sugar-Salt Mixture:
  • 1 kg sugar
  • 100 grams of rock salt
  • Optional: 50 grams Ajinomoto MSG

Ingredients:

  • 300 grams of sugar-salt mixture
  • 1 kg ground pork
  • 1/2 cup soy sauce
  • 1 tablespoon ground black pepper
  • 2 whole garlic bulbs, minced

Instructions:

  1. Prepare the Sugar-Salt Mixture:
    In a large bowl, mix 1 kg of sugar, 100 grams of rock salt, and optionally 50 grams of Ajinomoto MSG. Store in an airtight container.
  2. Marinate the Pork:
    In a large mixing bowl, combine 1 kg of ground pork with 300 grams of the sugar-salt mixture, 1/2 cup soy sauce, 1 tablespoon ground black pepper, and 2 minced garlic bulbs. Mix thoroughly until all ingredients are well incorporated. Cover and refrigerate overnight to let the flavors meld.
  3. Shape the Longganisa:
    After marinating, shape the mixture into longganisa pieces according to your desired size and shape.
  4. Cook the Longganisa:
    Heat cooking oil in a pan over low heat. Cook the longganisa pieces for 5 to 7 minutes or until they reach your desired level of doneness.
