- 1 cup cooked shrimp, peeled and deveined
- 1 cup cooked rice noodles
- 1 cup shredded lettuce
- 1 cup shredded carrots
- 1 cup fresh mint leaves
- 1 cup fresh cilantro leaves
For the dipping sauce:
- 1/2 cup creamy peanut butter
- 1/4 cup hoisin sauce
- 2 tablespoons soy sauce
- 2 tablespoons lime juice
- 1 tablespoon honey
- 1 teaspoon sesame oil
- 1/4 cup hot water
- 1 clove garlic, minced
- Sriracha sauce (optional)
Instructions:
- Prepare all the ingredients for the spring rolls by cooking the shrimp and rice noodles, and shredding the lettuce and carrots.
- Fill a large bowl with warm water. Dip one rice paper wrapper into the water and let it soak for 10 seconds until it softens.
- Place the softened wrapper on a clean work surface.
- Arrange a few shrimp, rice noodles, lettuce, carrots, mint leaves, and cilantro leaves on the bottom third of the wrapper, leaving some space on either side.
- Fold the sides of the wrapper over the filling, then tightly roll the wrapper up from the bottom to the top to form a neat package. Repeat with the remaining ingredients.
To make the dipping sauce:
- In a mixing bowl, whisk together the peanut butter, hoisin sauce, soy sauce, lime juice, honey, sesame oil, and garlic until well combined.
- Add hot water gradually, whisking continuously, until the sauce reaches the desired consistency. If you prefer a thinner sauce, add more water, and if you prefer a thicker sauce, add less water.
- Taste the sauce and adjust the seasoning as desired. You can add more soy sauce for saltiness, honey for sweetness, or sriracha for spiciness.
