Ingredients:
- 2 pounds pork belly, skin on, divided into 4 sections
- 1 tablespoon salt
- 1 teaspoon black pepper
- 2 bay leaves
- 4 cups water
- 4 cups cooking oil (for deep-frying)
Instructions:
- In a large pot, combine the pork belly, salt, black pepper, bay leaves, and water. Bring to a boil over medium-high heat.
- Lower the heat and let the pork belly simmer for 45 minutes to 1 hour, or until the meat is tender.
- Remove the pork belly from the pot and let it cool for a few minutes.
- In a deep frying pan or a wok, heat the cooking oil over high heat.
- Once the oil is hot, carefully add the pork belly to the pan, skin side down. Fry until the skin is golden brown and crispy, about 10-15 minutes.
- Flip the pork belly over and fry the other side for another 10-15 minutes, or until the pork is cooked through and crispy on all sides.
- Remove the pork belly from the pan and let it cool for a few minutes.
- Cut the pork belly into 2-inch cubes using a sharp knife.
