Roasted chicken is a classic dish that is perfect for a special occasion or a Sunday dinner with family and friends. Ingredients:

  • 1 whole chicken (about 2-3 pounds)
  • 2 tablespoons butter, melted
  • 2 teaspoons dried thyme
  • 2 teaspoons dried rosemary
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 lemon, halved
  • 1 onion, quartered
  • 2 cloves garlic, crushed

Instructions:

  1. Preheat the oven to 425°F (220°C).
  2. Rinse the chicken inside and out with cold water and pat dry with paper towels.
  3. In a small bowl, mix together the melted butter, thyme, rosemary, garlic powder, salt, and black pepper.
  4. Rub the butter mixture all over the chicken, making sure to get under the skin and in the cavity.
  5. Stuff the cavity of the chicken with the lemon halves, onion quarters, and crushed garlic.
  6. Tie the legs together with kitchen twine and tuck the wings under the body.
  7. Place the chicken in a roasting pan and roast for 1 hour and 30 minutes, or until the internal temperature of the chicken reaches 165°F (75°C) when measured with a meat thermometer.
  8. Let the chicken rest for 10 minutes before carving and serving.
