Ingredients:

  • 1 lb large shrimp, peeled and deveined or not
  • 4 cups water
  • 4 stalks of lemongrass, smashed and cut into 2-inch pieces
  • 4 kaffir lime leaves, torn into small pieces
  • 1 tbsp galangal (Thai ginger), sliced
  • 3 Thai bird’s eye chili peppers, chopped (or to taste)
  • 1 cup mushrooms, sliced or whole
  • 2 tbsp fish sauce
  • 2 tbsp lime juice
  • 2 tbsp chopped cilantro
  • Salt, to taste

Instructions:

  1. Bring the water to a boil in a large pot over medium-high heat.
  2. Add the lemongrass, kaffir lime leaves, and galangal to the pot. Boil for 5-10 minutes until fragrant.
  3. Add the shrimp, mushrooms, and chili peppers to the pot. Cook for 3-4 minutes until the shrimp are pink and cooked through.
  4. Remove the pot from heat and add the fish sauce, lime juice, and salt to taste.
  5. Serve hot with chopped cilantro on top.
