Ingredients:
- 1 lb large shrimp, peeled and deveined or not
- 4 cups water
- 4 stalks of lemongrass, smashed and cut into 2-inch pieces
- 4 kaffir lime leaves, torn into small pieces
- 1 tbsp galangal (Thai ginger), sliced
- 3 Thai bird’s eye chili peppers, chopped (or to taste)
- 1 cup mushrooms, sliced or whole
- 2 tbsp fish sauce
- 2 tbsp lime juice
- 2 tbsp chopped cilantro
- Salt, to taste
Instructions:
- Bring the water to a boil in a large pot over medium-high heat.
- Add the lemongrass, kaffir lime leaves, and galangal to the pot. Boil for 5-10 minutes until fragrant.
- Add the shrimp, mushrooms, and chili peppers to the pot. Cook for 3-4 minutes until the shrimp are pink and cooked through.
- Remove the pot from heat and add the fish sauce, lime juice, and salt to taste.
- Serve hot with chopped cilantro on top.
