Ingredients:

  • 1 large milkfish (bangus), cleaned and sliced into serving pieces
  • 1 can (14 oz) of black beans (tausi), drained and rinsed
  • 4 cloves of garlic, minced
  • 1 onion, chopped
  • 2 tomatoes, diced
  • 1 cup of water
  • 2 tablespoons of cooking oil
  • 1 tablespoon of fish sauce
  • Salt and pepper to taste
  • Flour for dredging

Instructions:

  1. Begin by rinsing the milkfish and patting them dry. In a shallow dish, place some flour and season it with salt and pepper to your liking. Gently coat the milkfish with the flour until they are lightly coated.
  2. In a pan over medium heat, heat about an inch of oil. Carefully add the milkfish and cook, turning occasionally, until both sides achieve a light, golden brown color. Remove the fish from the pan and let them drain on paper towels.
  3. In the same pan over medium heat, add approximately one tablespoon of oil. Introduce the onions, garlic, and ginger, and sauté until they become fragrant.
  4. Now, add the diced tomatoes to the pan and cook, occasionally mashing them with the back of a spoon until they soften.
  5. Pour in the fish sauce and continue to cook for about a minute. Following this, add water and allow it to come to a simmer.
  6. Incorporate the black beans into the mixture and continue to cook for 3 to 5 minutes or until the liquid has slightly reduced.
  7. Gently introduce the fried fish into the pan and cook for an additional 3 to 5 minutes, ensuring they are fully cooked and evenly coated with the sauce.
