Nilagang Baka is a hearty Filipino beef soup with vegetables that’s perfect for a comforting and nutritious meal. This soup is loaded with tender beef shank, potatoes, cabbage, and bok choy, simmered in a flavorful broth that’s seasoned with fish sauce and spices.

Ingredients:

  • 1 kg beef shank, cut into cubes

  • 4 potatoes, peeled and quartered
  • 1 whole cabbage, chopped
  • 1 bunch of bok choy, chopped
  • 5 cups water
  • 2 tbsp fish sauce
  • Salt, to taste

Instructions:

  1. In a large pot, sauté the onion, garlic, and ginger (if using) until fragrant.
  2. Add the beef shank, whole peppercorns, and fish sauce. Stir well and let it cook for 5 minutes.
  3. Pour in the 5 cups of water and bring to a boil. Lower the heat and let it simmer for 1 hour. Add more water as needed.
  4. Add the potatoes and let them cook for 5 minutes or until tender.
  5. Add the cabbage and bok choy. Season with salt, to taste.
  6. Let it cook for 3-5 minutes until the vegetables are cooked but still crisp.
  7. Serve hot.
