The Homemaker’s Cookbook Recipe No. 53. “Quick and Easy Kare-Kare Recipe”

Experience the magic of Filipino cuisine with a modern twist in our  Kare-Kare recipe. This fusion of flavors brings together succulent ox tripe, vegetables, and the richness of traditional peanut sauce.

Cook Time: 45 minutes (using a pressure cooker)
Total Time: 1 hour and 5 minutes

Ingredients:

  • 1 kg ox tripe, cleaned and sliced
  • 2 tablespoons cooking oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 eggplant, sliced
  • 1 bundle string beans, cut into 2-inch lengths
  • 1 banana blossom heart, sliced (optional)
  • 1 bunch pechay, trimmed and leaves separated
  • 1 cup ground peanuts (or peanut butter) or store bought ready to use kare-kare mix
  • 1/4 cup rice flour (dissolved in 1/2 cup water)
  • Salt and pepper to taste
  • Bagoong (fermented shrimp paste), for serving

Procedure:

  1. Cook the ox tripe in the pressure cooker for 45 minutes. Follow the instructions on using a pressure cooker.
  2. After 45 minutes, release the pressure or simply wait for it to cool down.
  3. In a large pot, sauté onions and garlic until fragrant then add the ox tripe with two cups of broth.
  4. Add ground peanuts or peanut butter to the pot, stirring well to combine (or add the dissolved kare-kare mix)
  5. Add the dissolved rice flour mixture to thicken the sauce. Simmer for an additional 10 minutes.
  6. In a separate pan, blanch the eggplant, string beans, banana blossom, and pechay leaves in boiling water until slightly tender. Drain and set aside.
  7. Add the blanched vegetables to the pot and mix them with the peanut sauce.
  8. Season with salt and pepper to taste. Simmer for a few more minutes to meld the flavors.
  9. Serve the Kare-Kare hot with steamed rice and bagoong on the side.
