Ingredients:

  • 1 kg beef ribs or beef brisket
  • 1 stalk baby leeks, sliced
  • 1 medium carrot cubed
  • 2 medium potato cubed
  • 1/2 cup soy sauce
  • 4 cups beef stock
  • 1/3 cup brown sugar
  • 4 tbsp sesame oil
  • 4 tbsp toasted sesame seeds
  • 1 pc star anise
  • 1 whole garlic, minced
  • 1 red onion, minced
  • 1 tsp cayenne pepper
  • Fish sauce, to taste
  • Freshly ground black pepper, to taste
  • Spring onions, for garnish
  • Sliced chillies (optional)

Procedure:

  1. In a pan, sauté minced garlic over medium heat until golden brown and crunchy. Set aside the crispy garlic.
  2. In the same pan, add minced onions and sauté until they turn translucent.
  3. Add the beef ribs or brisket to the pan and brown them on all sides.
  4. Pour in the soy sauce and then add enough beef stock to cover the beef. If 4 cups of stock are not enough, you can add water to ensure the beef is fully covered.
  5. Drop in the star anise and add the brown sugar. Bring the mixture to a boil, then reduce the heat to a simmer. Let it cook for 45-60 minutes, or until the beef becomes tender and flavorful.
  6. Stir in the sesame oil, toasted sesame seeds, sliced baby leeks, carrot, potato, and cayenne pepper. Let the stew simmer for an additional 5 minutes or until the potato and carrot are soft.
  7. Season the stew with fish sauce and freshly ground black pepper to taste.
  8. To serve, ladle the Korean beef stew into bowls. Garnish with chopped spring onions and sliced chillies if you desire an extra kick of heat.
